Strawberry & Blueberry Pops

It’s been warm in Southern Spain. Popsicles seemed to be a nice way to cool down. I used what fruit I had on hand and they turned out delicious! Use what you got, and get creative! These popsicles are easy to make and great to eat anytime you need to cool off. I feel like a kid again, it’s quite fun. I picked up the Popsicle molds a few weeks ago on a trip to IKEA. They look like this:

Serving Size: 6

Ingredients

1-cup strawberries, diced

1-cup blueberries, diced

1 Tablespoon sugar (honey can used as well)

1 lime, squeezed

Directions:

  1. Combine all ingredients in a food processor or blender and thoroughly mix.
  2. Poor the mixture evenly into the molds.
  3. Place in the freezer.
  4. Freeze for 6 – 8 hours or overnight.
  5. When ready to eat, let the Popsicle stand at room temperature for about 5 minutes.
